First, you want to prep the shrimp: make sure the shrimp are peeled, deveined, and the tails removed. Pat dry with a paper towel and add to a plate. Drizzle with avocado oil and add taco seasoning and garlic powder, season with salt and pepper. Mix until shrimp are fully coated and set aside.

For the sauce, add all the ingredients into a medium bowl and stir to combine. Reserve some sauce for drizzling over tacos then add the cabbage and cilantro into the rest of the sauce. Mix it up and refrigerate until ready to serve.

In a large non-stick skillet over medium-high heat, sauté the shrimp for a few minutes per side, until slightly charred and no longer gray. Transfer to a plate and wipe the skillet clean with a paper towel. Char tortillas over high heat for 1 minute per side. Now you're ready to assemble.

Lay out the tortillas and add some slaw, followed by 2 or 3 shrimp, drizzle with the reserved sauce, and add some cilantro on top. Serve immediately.
